Sweet & Sour Chicken

Quick and easy to prepare. Serve over rice

  • 3 tablespoons olive oil
  • 1/2 cup all purpose flour
  • 1 onion diced
  • 2 green bell peppers cut into strips
  • 1 pound thinly sliced chicken cutlets
  • 1/2 cup pineapple chunks (with juice)
  • 1/3 cup brown sugar
  • 1/2 cup ketchup
  • 1/2 cup lemon juice


  1. Mix lemon juice, ketchup, pineapple chunks and brown sugar
  2. Cut chicken cutlets into bite size pieces and dredge in flour
  3. Heat olive oil in a pan on high heat
  4. Add chicken pieces to pan and brown on both sides (about 2 minutes on each side)
  5. Remove chicken from the pan and set aside
  6. Add bell peppers and onion to the same pan. Add more olive oil if needed and cook until slightly tender
  7. Add chicken pieces back to the pan and cook for additional 2 minutes stirring constantly
  8. Reduce heat
  9. Pour lemon juice mixture into the pan and stir until ingredients are well combined
  10. Cover the pan and let it simmer on low until done. (About 10 minutes)
  11. Serve over rice
